Campfire Chili: The Ultimate Comfort Food

Nothing beats a hearty bowl of chili cooked over an open fire in a cast iron pot. This rich, flavourful dish is the perfect campfire comfort food, warming you up after a long day outdoors. Slow-simmered to perfection, it blends smoky spices, tender beef, beans, and tomatoes for a filling and satisfying meal. Enjoy it with fresh bread, over baked potatoes, or straight from the pot while gathered around the fire. A true camping classic!

Ingredients:

  • 2 lbs ground beef

  • 1 green pepper, diced

  • 1 onion, diced

  • 1 (156ml) can tomato paste

  • 1 (398ml) can tomato sauce

  • 1 (398ml) can diced tomatoes (fire-roasted for extra flavour)

  • 1 (398ml) can kidney beans, drained and rinsed (optional)

  • 2 tbsp chili powder (or to taste)

  • Red pepper flakes (optional, for added heat)

Instructions:

  1. Cook the Beef & Veggies:

    • Heat a cast iron pot over the campfire (or use a stove at home or camp).

    • Brown the ground beef with diced onions, then drain any excess fat.

  2. Add Ingredients & Simmer:

    • Stir in the green pepper, tomato paste, tomato sauce, diced tomatoes, kidney beans (if using), chili powder, and red pepper flakes.

    • Let it simmer for at least 30 minutes, stirring frequently.

    • The longer it simmers, the better the flavours develop! Ensure the fire isn’t too hot to avoid burning the bottom.

Serving Suggestions:

  • Top with sour cream and shredded cheddar cheese for extra richness.

  • Serve with baked potatoes cooked over the fire.

  • Pairs well with fire-roasted corn on the cob and fresh buns.

This campfire chili is a staple for any outdoor adventure—simple, satisfying, and packed with flavor!
